Spiced Aubergine With Yoghurt, Hummus and Za’atar

    • 1 aubergine, cut into 2x 1-inch thick steaks
    • 1 tsp ground cumin
    • 1 tsp za’atar
    • 1 tbsp harissa
    • 2 tbsp Greek yoghurt
    • 2 tbsp hummus
    • Coriander
    • Extra virgin olive oil
    • Maldon salt
    1. Season the aubergine with cumin, salt and harissa.
    2. Char grill on the BBQ for two mins on each side until tender.
    3. Top each steak with the yoghurt, hummus, za’atar and coriander and drizzle with olive oil.
