For the chops
- Lamb chops
- Salt
- Pepper
For the marinade
- Three fresh chillies - sliced thin
- Handful of coriander
- ½ tbsp garlic paste
- ½ tbsp ginger paste
- ½ tbsp cumin
- Salt
- Pepper
- ½ tbsp paprika
- Tsp cayenne pepper
- Juice of two limes
- Tbsp olive oil

- Using a mortar and pestle, mash all the marinade ingredients together until well combined. Transfer the mixture to a large bowl.
- Add the seasoned lamb chops to the bowl, ensuring they are thoroughly coated with the marinade. Cover and leave to marinate in the fridge for a few hours or overnight for the best flavour.
- When ready to cook, preheat your BeefEater® BBQ to a medium heat. Transfer the marinated lamb chops to the grill and cook to your desired doneness, aiming for medium.
- If you have any leftover marinade, transfer it to a saucepan and heat gently. Then remove from the heat and stir in some Greek yogurt to create a flavourful dipping sauce.
