Crying Tiger Sauce with Steak
Method
For the steak
- Marinate overnight in soy sauce and fish sauce, or if you’re in a rush just let it sit for about an hour.
- Once that is done and your ready to cook, heat your BeefEater BBQ to medium-high and grill the meat until its medium rare, or to your liking.
- Let it rest and slice it into thin strips.
For the crying tiger sauce
- In a dry frying pan, roast the rice by tossing constantly for 2–3 minutes over medium heat, until it is opaque and just starting to brown in spots.
- Grind the rice to a rough powder in a mortar and pestle or in a food processor then set to the side, some texture is nice.
- In the mortar and pestle, add in the sugar, chilli and the clove of garlic. Crush the chilli and garlic. Once that is done, add in fish sauce, lime and chilli powder and rice powder.
- Stir and set aside.
- Before serving, add coriander leaves to garnish.
Ingredients
Marinade
- 1 kg Beef fillet
- ½ cup soy sauce
- 2 tbsp fish sauce
Dipping Sauce
- 2 tbsp fish sauce
- ¼ tsp sugar
- 2 tbsp lime juice
- 1 whole chilli
- ½ tsp chilli powder
- 1 clove of garlic
- 1 tbsp roughly sliced coriander leaves
- ½ tsp uncooked white rice
- A dash of water to adjust liquid consistency
